Another Up There Adventure.

Well, after many months of hard work and frustration I finally got the old ice shack up north and on the lake, and with all that hard work who had time for cooking??? Well, that settled it, we had to go out to eat.

Finding somewhere safe to eat up north can be kind of a challenge, especially once we found out that the place we would normally go was way behind and had a long wait.

We decided on a long shot and gave a small little supper club a try called the “Country Inn” up near Silver Cliff, WI. The place was small, quiet and very cozy inside. While it had hints of up north it wasn’t what I would call a red neck dive. In fact the tables were very clean and the staff was very polite and helpful.

We decided we would ask and find out if anyone at the place knew anything about gluten free dining, and it just so happened the bartender was diagnosed with celiac. The waitress (his wife) knew that their poached salmon was gluten free as the only ingredients were “salmon” (of course) and “salt”. And she knew enough to know she cooked it in its own aluminum pouch so there would be no cross contamination issues. She also offered a baked potato with butter and a green salad which would be safe.

The only strange thing is this; she told us here husband (the bartender) got so fed up with the gluten free diet that he has decided to eat gluten again and for good measure takes an Imodium pill every day to offset the symptoms. She said it takes care of all his symptoms if he doesn’t go overboard. While I do think that’s the equivalent of putting a Band-Aid on a shotgun blast we really didn’t want to upset anyone by prolonging this uncomfortable conversation. I hope that somehow, someway he changes his mind and seeks treatment and a gluten free diet before any further damage is done, maybe I’ll write a letter? Of course we do want to eat there again :-)

That strange conversation aside, the food was absolutely delicious. The steak I had was dynamite, just a salt and pepper seasoning and a baked potato side, perfectly, naturally gluten free. All the stakes are put on the grille on their own individual hot plates that come out sizzling hot.

The salmon was also naturally delicious and gluten free as were a few other options, and the waitress was willing to work with us. She also wasn’t the type that was going to say “ah it’s fine just eat it”. She was more the type that would let you go hungry before she let you go sick, which in my opinion is the kind of person you want to work with if you want to be safe.

All in all we had a very nice and comfortable eating experience up at the “Country Inn” and will for sure go back, maybe we can even get the bartender back on the GF train

Tea for Two.

I thought I would send this post out before I retire for the night.

One of my favorite things to do as soon as I get home is to steep two bags of Yogi “Bedtime” Tea. And the other night, even though there was nothing threatening about the ingredient list I wanted to look up to be 100% sure it was gluten free.

What I found kind of surprised me, Bedtime tea is in fact gluten free but another tea I have my tea box “Kava Stress Relief” contains barley malt, along with their “Calming Tea” “Fasting Tea” and “Stomach Ease” Tea.

This serves as a lesson to myself that no matter how smart about ingredients I think I am, it always deserves a second look.

I will continue to drink my “Bedtime” Yogi tea with reckless abandon, but I’ll be on the lookout from now on with any other teas out there.  One can never be to careful!

Burnin’ Love

It’s clear from what I have written that I LOVE anything pumpkin, but there are a few other little things that I love almost just as much, and speaking of love, my GF gal requires some of that occasionally as well! (yes I did get a girl to stick with me as hair brained and busy as I am) and with that has to come some “glue-sponsibility” (gluten responsibility) So, for those of you who have to keep your GF / GF, BF, BFF DH, DK or DW gluten free and still want to be able to snack, here you go! (told you I was hair brained…)

I love to indulge in an occasional cookie or cracker or, ok I’m lying, I like to pig out on cookies and chips and crackers often, but what about that transfer of gluten from person to person. Now, if you absolutely love brushing your teeth 25 times a day until your gums bleed you can disregard these suggestions.

The question becomes: “What can I snack on that is GF and still has some flavor?”

Monday Monday,

Ok, so I can be repetitive, but I do want to go over some of the products I have tried out over the last year that have been nothing short of amazing. I will start with ingredients I found in an attempt to put a good pie recipe together. I never, EVER thought I would be able to make a gluten free, egg free, diary free anything, let alone a pumpkin pie, but finally, after many tries I got it right (if you can’t tell I kind of obsess over pumpkin things) and to my surprise it went quite well. I decided to make it two different ways: one with soy and one with goat milk. Surprisingly the pie with condensed goat milk was far superior in taste to the soy pie. Now like most, I would love to omit any kind of dairy, even goat, but I also hate the idea of using soy in everything. The first thing I had to start off with was the pie crust, I make a simple crust with earth balance vegan butter, a cheaper GF all purpose flour and some water. There are a few local producers of GF flour in the area that are superb but I hate waist the flavor and money on a pie crust. I also found that grinding up a cup of Kinnikinnick gluten free Smoreable graham crackers added a nice touch and finish of the flavor. After the pie crust was resolved I had to move on to the filling, the recipe is simple, and keeping it simple keeps it safe, tasty and not too pricey, if I can’t make it for cheaper than I am buying it, I’m doing something wrong. I usually start off with a cheaper domino brand sugar (checked with the company and yes it is gluten free) or you could use sugar in the raw (also checked GF) but I like to grind it up further for baking. For the spices I LOVE penzey spices! They’re a local company out of Wauwatosa, WI and can be contacted on specific spices to determine if they are GF (The cinnamon, ginger and cloves for the pie are for sure GF) As far as egg replacer goes I have only had success with the “ener-G” brand, I know there is some available from Bob’s Red Mill, but I just have a tendency to shy away from their products. You do have to be careful to follow the directions on the box perfectly or you’re in for a surprise, just trust me on this. And lastly you have to decide, dairy or no. Soy replacers are great in some aspects but if you are someone you cook for is allergic to soy or suffers from migraines I would suggest using the evaporated goat milk, I was turned off at first I must admit, but the flavor is so much more rich and satisfying over a soy product I would never switch back. It is doable, and it doesn’t have to be bland. I will post the recipe on my recipe page when time permits.

Naturally gluten free spring rolls, a must eat!

I would like to start to expand my “Gluten Free Dining in Green Bay” page soon, I would ask anyone with any information on great places to eat gluten free / shop gluten free in Northeast Wisconsin to please email me with any suggestions.

There is one place in Belleview I have been holding off on mentioning, on one side, it is the only gluten free kitchen in the area, but on the other, their hours, prices and sometimes attitudes makes it tough for me acknowledge them. What I mean by that is this, I work a long week, typically 7am to 6:30pm, and their stated hours are Wednesday ONLY between 9:00 AM and 7:00 PM. 

I think what they are trying to do is fantastic, I think it could be a wonderful thing! But to be honest, if Caffe Naturally is only open when I am at work, how can I enjoy eating there? Debra, please expand the hours for us working folks!

The second part of this equation is price, now at the Caffe I feel like the prices are just right, but in the same building as Caffe Naturally is “Terry Naturally”. Terry Naturally is a “health food” / “healthy living” store. I frequently go to the store to purchase tea and olive oil, I also tend to browse there quite a bit but what I find is that so many of the food products offered I can find at our local Festival Foods for fractions of the price. Now I am all about supporting the local small business, but to be honest, for me, time is money and a bargain is a bargain, perhaps when I win the lottery, which I would actually have to play first to do, I will have more free time and free money to invest in this wonderful place. Until then, I have to remain in reality.

Uno Dos Tres…

Today I am reflecting on one of our favorite restaurants of cities past. Uno Chicago Grille. When we lived in Little Chute, WI we were only a few miles from this gem, Uno’s not only offers  gluten free pizza and beer but the staff are also very well trained in what gluten is and what has gluten in it. This is more than I can say for most places, even those with gluten free menus. The one down side is this: if you have other allergies it always makes it more difficult, unfortunately an egg allergy ruins the pizza idea but there are so many more options at this place we found it to be a staple in our lives. Today I sent an email to their corporate web site asking for them to please consider adding a Uno’s in Green Bay, I promised we would be one of their best customers for life!

 

Even though we only live a half an hour away from the Little Chute / Appleton area we still find we don’t visit quite as much as we thought we would. We figured it would be a trip every other week or so and now we’re lucky if we make it once in two months. While I sort of consider this lazy, I also think that Green Bay and everywhere north of here lacks in gluten free friendly establishments.

Mjcoffee’s GF Pumkin Bread

Yes I’m resorting to a recipe

MJCOFFEE’S GF Pumpkin Bread

  • 1 can of organic pumpkin (raw)
  • 4 eggs worth of “egg substitute” (Bob’s or Ener-G)
  • 1 cup vegetable oil
  • 2/3 cup water
  • 3 cups white sugar
  • 3 1/2 cups gluten free baking flour (Mama’s or Bob’s Red Mill is good!)
  • 2 teaspoons gluten free baking soda (Bob’s Red Mill is also aluminum free)
  • 1 1/2 teaspoons salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/4 apple pie spice
  1. Preheat oven to 350 degrees F and grease two 7x3ish inch loaf pans.
    1. In a large bowl, mix together organic pumpkin puree, egg replacer, oil, water and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, and spices. Then mix it all together and pour into the loaf pans.
    2. Bake for just about an hour, don’t get excited that the bread doesn’t raise as much as you might expect, the egg replacer has that effect. What I can tell you is that the bread ends up more dense but is so packed with flavor its UNBELIEVABLE!!!!

Try it, you’ll like it! :)
